EGGPLANT PARMIGIANA ON RYE

Ingredients:

Prepared Eggplant Parmigiana
Homemade Rye Bread
Marinara Sauce, or Mushroom/Tomato Sauce
Grated Vegan Parmesan Cheese

Directions:

Slightly toast sliced Rye Bread.  
Put a little sauce on the toasted bread.  
Place a few slices of the Eggplant Parmigiana
over the bread.  Put a little more sauce
over the eggplant.  
Sprinkle a bit of
Vegan Parmesan Cheese on top.
Cover with another slice of toasted rye bread.  Enjoy!
